Ingredients:

1.2kg pork shoulder, trimmed of excess fat

1 onion, sliced

250ml chicken stock
-
150ml BBQ sauce (plus extra to serve)

2 tbsp apple cider vinegar

1 tbsp brown sugar

1 tsp smoked paprika
-
1 tsp garlic powder

1 tsp salt
Method:

Place onion in the bottom of the cooker pot.

Mix stock, BBQ sauce, vinegar, sugar, paprika, garlic, and salt. Pour over pork.

Close lid. Select Pressure Cook, set for 60 minutes.

Allow natural release for 15 minutes.

Remove pork, shred with two forks, and mix with extra BBQ sauce. Serve in buns or over rice.

1 onion, finely chopped

250g chestnut mushrooms, sliced

125ml dry white wine

750ml hot chicken stock

Handful fresh parsley
Method:

Select Brown/Sauté. Melt butter, add onion and mushrooms, cook for 2–3 minutes.

Stir in rice, cook for 1 minute. Add wine and let it absorb.

Stir in chicken and stock. Close lid.

Select Pressure Cook, set for 7 minutes.

Quick release. Stir in Parmesan and parsley. Serve immediately.
Classic Beef Stew

Ingredients:

1 tbsp olive oil

800g stewing beef, diced

1 onion, chopped
-
2 carrots, chopped
-
2 potatoes, diced

2 cloves garlic, crushed

500ml beef stock

2 tbsp tomato purée

1 tsp dried thyme

Salt & black pepper
Method:

Select Brown/Sauté mode. Heat oil and brown the beef in batches. Set aside.

Add onion, carrots, and garlic. Cook for 2 minutes. Stir in flour.

Return beef, add potatoes, stock, tomato purée, thyme, salt and pepper. Stir well.

750ml whole milk

50g caster sugar

1 tsp vanilla extract
